Potatoes are my favorite food group. Ok, well I guess they are not a food group unto themselves. But they should be. We are a potato-loving family and I can honestly say that we love them prepared all different ways. But one of my favorite ways is this easy Twice Baked Potatoes With Bacon recipe.

What Ingredients Do I Need To Make Cheesy Twice Baked Potatoes With?

Idaho Potatoes

Cooking oil, as needed

Butter

Sour cream

Milk

Salt and pepper, as desired

Shredded Cheddar cheese

Chopped bacon, plus 2 Tablespoons additional for garnish

Green onions, optional garnish

How Do I Make Easy Twice Baked Potatoes Recipe?

Preheat your oven then line a baking sheet with tinfoil. Scrub each potato clean and then rub with cooking oil. Place the potatoes on the lined cookie sheet and bake for 1 hour. Allow the potatoes to cool until you are able to handle them comfortably. Reduce the heat of the oven to 350F.

These Best Twice Baked Potatoes With Bacon are a cheesy, creamy and filled with lots of bacon. This easy potato recipe is perfectly portioned and can be made in advance. 

Cut each potato in half, lengthwise, then use a spoon to scoop out the potato flesh, leaving about 1/4” to 1/2” flesh attached to the potato skin. Place the scooped potato flesh in a large mixing bowl.

Once all of the potatoes have been scooped out, add the butter, sour cream, salt and pepper, 1/2 cup of the cheese and 1/2 cup of the chopped bacon to the mixing bowl. Beat all ingredients together until completely combined.

Scoop the potato mixture back into the potato skins. Top each potato with shredded cheese and chopped bacon. Bake the potatoes until the cheese is melted, about 8-10 minutes. Garnish with green onions before serving, optional.

Ingredients

  • 5 potatoes
  • Cooking oil, as needed
  • 1/2 cup butter
  • 1/2 cup sour cream
  • 1/2 cup milk
  • Salt and pepper, as desired
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped bacon, plus 2 Tablespoons additional for garnish
  • Green onions, optional garnish

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with tinfoil.
  2. Scrub each potato clean and then rub with cooking oil. Place the potatoes on the lined cookie sheet and bake for 1 hour.
  3. Allow the potatoes to cool.
  4. Lower the heat of the oven to 350F.
  5. Cut each potato in half, lengthwise, then use a spoon to scoop out the potato inside, leaving about 1/4” to 1/2” flesh attached to the potato skin.
  6. Place the scooped potato in a large mixing bowl. Once all of the potatoes have been scooped out, add the butter, sour cream, salt and pepper, 1/2 cup of the cheddar cheese and 1/2 cup of the chopped bacon to the mixing bowl.
  7. Beat all ingredients together until completely combined.
  8. Scoop the potato mixture back into the potato skins.
  9. Top each potato with shredded cheese and chopped bacon.
  10. Bake the potatoes until the cheese is melted, about 15 minutes.
  11. Garnish with green onions before serving, optional.
