Well, we have made it through the first week of summer. School’s out, the weather is warm, the pool is ready and waiting. It’s time to celebrate! I’ll be honest, last week was downright hectic for us so I am excited for a little downtime this week. Living and working on our farm is busy. Summer on the farm is even busier so we don’t get to take a summer vacation like most families. We make the most of summer by taking a staycation which includes swimming in our pool and a few quick day trips to local attractions. I really enjoy those lazy pool days. There is nothing that a pool, a good book and a refreshing frozen drink won’t cure.
My daughter Gabrielle and I share a love of frozen coffee drinks. But I seriously hate paying top dollar at the local coffee shop when I can make one just as delicious at home. Her birthday falls at the beginning of summer and this Peanut Butter Mocha Caramel Frappe is the perfect way to celebrate number 19! I still can’t believe she is turning 19. I like to make birthday’s special and this frappe is the perfect celebration drink. This Peanut Butter Mocha Caramel Frappe combines three of my favorite flavors – peanut butter, mocha and caramel into one summer cool-down drink. Gabrielle and I will thoroughly enjoy sipping this by the pool.
Before I rave about this amazing frappe, I want to talk about my love of coffee first. It’s a known fact that I can’t function properly without that first cup of coffee in the morning. I am a lover of sweet coffee – sweet, flavored coffee. International Delight Caramel Macchiato Gourmet Coffee Creamer® and International Delight French Vanilla Gourmet Coffee Creamer are my creamers of choice to sweeten the deal. They are perfect for a daily cup of joe! If I want to take my coffee one step further my making my own coffee drink like this Peanut Butter Mocha Caramel Frappe, I add a dollop of Reddi-wip® because everything is always better with whipped cream. Reddi-wip® is made from cows not treated with artificial growth hormone. It contains no artificial flavors or sweeteners.
Summertime is fun time. What better way to celebrate no school and the kids being home than with a delicious frappe. I love creating fun recipes that the whole family will enjoy. Iced coffee drinks have a special place in my heart. It’s a known fact not to talk to mom until I have had at least one cup of coffee. During the hot summer months, I always drink iced coffee instead. We are a perfect fit. I love the variety of flavors International Delight offers. So many delicious reason to make a cool-down frappe at home this summer.
Before making this frappe, you will need to freeze some coffee ice cubes. You can do this step ahead of time and store your coffee cubes in the freezer. They will be ready for your next frozen coffee concoction. Using regular ice cubes and coffee in the frappe will work but will water the drink down….and we don’t want that do we?
I tend to gravitate towards anything with salted caramel. So naturally, I used salted caramel ice cream in this recipe as well. This drink whips up quickly, which means we can all enjoy it faster. Add about eight coffee ice cubes to a blender along with two scoops of salted caramel ice cream, some peanut butter, chocolate sauce and caramel sauce.
Pour about a half a cup of International Delight Caramel Macchiato Gourmet Coffee Creamer and some milk and blend until smooth. If you find your frappe is too thick, add some extra milk.

- 8 coffee ice cubes
- 2 scoops salted caramel ice cream
- 1/2 cup International Delight Caramel Macchiato Gourmet Coffee Creamer
- 1/4 cup milk
- 2 heaping tablespoons peanut butter
- 1/4 cup chocolate syrup plus extra for garnish
- 2 tablespoons caramel syrup plus extra for garnish
- Reddi-Wip® for garnish
- To prepare glass, swirl caramel and chocolate syrup around inside of the glass. Spread some peanut butter around rim and dip in crushed peanuts and syrups. Set aside until ready to fill
- Add coffee ice cubes, ice cream, peanut butter, syrups, creamer and milk to a blender.
- Blend until smooth. If frappe is too thick, add some extra milk.
- Pour into prepared glass. Top with a dollop of Reddi-Wip®.
- Garnish with crushed peanuts, chocolate syrup and caramel syrup.
- Enjoy
