My friends find it funny that this girl from New Jersey loves to watch auto racing. While I would never want to drive one of those cars myself, there is just something so exciting about auto racing. The rubbing, the drafting, the RACE itself – it’s all very intriguing. When my husband and I have time to sit down and watch a race, we like to snack. These Spicy Southwestern Chicken Skillet Nachos are a perfect way to rev up our race day taste buds.

Every race needs a spiced up dish to snack on. Here is how I make these easy Spicy Southwestern Chicken Skillet Nachos. I am all about crunchy snacks and these nachos definitely fit the bill.

Spicy Southwestern Chicken Skillet Nachos

A cast iron skillet is my best friend! I love it’s versatility. To make these nachos, I first made a zesty corn and black bean salsa, which I top them off with. I layered tortilla chips, cheese and chicken in the skillet. I topped with another layer of chips, cheese, chicken and the salsa. I baked the nachos in the oven until the cheese was nice and melted. Remove from the oven and top with some chopped tomatoes, avocados and diced scallions.

Ingredients
  • 1 large bag of tortilla chips
  • 3 cups cheddar cheese
  • 2 cups chopped grilled chicken
  • 3/4 cup frozen corn
  • 2/3 cup black beans drained
  • 1/4 cup red onion diced
  • 1 clove garlic minced
  • 1 jalapeno finely diced
  • 1/2 cup red pepper diced
  • Juice of one lime
  • Salt & pepper to taste
  • 2 tablespoons fresh cilantro
  • 1 tablespoon oil
  • 1 cup tomato diced
  • 1 avocado diced
  • Sour Cream for garnish
  • Salsa for garnish
Instructions
  1. Preheat oven to 375 degrees.
  2. In a medium bowl, combine corn, black beans, onion, garlic, jalapeno, red pepper, cilantro, salt and pepper. Squeeze juice of one lime and mix in the oil. Set aside.
  3. Spread a layer of tortilla chips on the bottom of a 12" cast iron skillet. Top with cheese and chicken.
  4. Spread another layer of tortilla chips. Top with cheese, chicken, and corn mixture.
  5. Bake in oven for 10 - 15 minutes until cheese is melted.
  6. Remove from oven and top with tomatoes and avocados.
  7. Serve with sour cream and salsa.

    I tried making a low-carb version of this by using lettuce cups instead of tortilla and it turned out sublime. Thanks for sharing this recipe! Will definitely be making it again.
