I love the flavors of fall. It’s the time of year when I go into pumpkin and apple overload – and I am totally OK with that. As life continues to be crazy this time of year for most families, quick meal ideas are a must. I find pumpkin recipes so comforting. We eat them all year long at my house. Yes, I know they are a key ingredient in many fall recipes, but daughter Gabrielle loves all things pumpkin. So, I keep a few cans of pumpkin puree so I can bake her some pumpkin recipes throughout the year. Too bad she is away at college and couldn’t enjoy a plate of this for breakfast. This Baked Pumpkin Walnut French Toast is a perfect comfort food. Since fall is all about comfort food, this recipe definitely fits the bill. Full of pumpkin flavor, this dish is prepared the night before and baked in the morning.
A good cup (or two) of coffee each day is a must in my life. Coffee with cream, please. I should clarify, coffee with a splash of Dunkin Donuts® Creamer please. Coffee gets me going in the morning. I can’t drink a cup of coffee without creamer. Dunkin Donuts® Extra Extra Creamer is always my favorite choice. It is made with real sugar, milk, and cream. I enjoy it in my coffee each morning and if I have a cup or two throughout the day. Dunkin Donuts® Extra Extra Creamer is nice and creamy with the right amount of sweetness.
I like it so much that I added it as a secret ingredient to my Baked Pumpkin Walnut French Toast recipe. Adding some of the Dunkin Donuts® Extra Extra Creamer adds richness to the pumpkin custard mixture. It’s really easy to whip together. Grab a loaf of French bread and cube. Place cubes in a baking dish. Mix eggs, pumpkin puree, brown sugar, pumpkin pie spice, creamer, and milk together. Pour the pumpkin custard over the bread. Cover and refrigerate overnight. I am all about dishes that can be prepared in advance. It’s a real time saver.
I add a generous amount of chopped walnuts just before baking. I also like to sprinkle some cinnamon sugar over the top to add to the flavor of the french toast. Oh so good!
When ready to serve, make sure you have plenty of warm maple syrup ready and waiting. This Baked Pumpkin Walnut French Toast is the perfect way to celebrate the flavors of fall. Pumpkin, spice, and everything nice.

- 6 large eggs
- 1 cup pumpkin puree
- 1/2 cup Dunkin Donuts® Extra Extra Creamer
- 1 cup milk
- 2 teaspoons pumpkin pie spice
- 1/2 cup brown sugar
- 2 teaspoons vanilla
- Pinch of salt
- 1 cup chopped walnuts
- Cinnamon Sugar
- 1 loaf French bread
- Grease 13 x 9 baking dish.
- Cube French bread. Spread evenly in greased baking dish.
- In a medium bowl, whisk eggs, pumpkin puree, creamer, milk, sugar, vanilla, salt and pumpkin pie spice together. Pour evenly over bread. Cover and refrigerate overnight.
- When ready to bake, preheat oven to 350 degrees.
- Remove foil and sprinkle with cinnamon sugar. Bake for 35-45 minutes.
