Well, friends, I have some sad news to share. This year’s strawberry season is soon coming to an end here on our farm. Boo! But don’t worry, I created a lot of delicious strawberry recipes to share with you here on The Farm Girl Gabs over the coming weeks. Next up in my strawberry recipe series are these yummy Strawberries and Cream Popsicles. Our Jersey Fresh strawberries have a special place in my heart. There is nothing like a jersey strawberry. They are as red as can be and oh so sweet. Their biggest downfall is the short season they have.
I make sure I freeze plenty of strawberries before the season ends to use in smoothies and my favorite strawberry daiquiri recipe throughout the year. They are so simple to freeze. I simply rinse, cut the tops off and spread out on a parchment-lined baking sheet. I pat them dry and then flash freeze them for about an hour. Once frozen, you can store them in either quart sized or gallon sized freezer bags.
When you are ready to make a smoothie, bake or whip up your favorite cocktail, just grab a bag out of the freezer and use what you need. I love having simple and healthy ingredients on hand at all times. Freezing your own is much more cost-effective too.
What Ingredients Do I Need To Make Strawberries & Cream Popsicles?
Jersey Fresh strawberries, washed and hulled
Nonfat vanilla Greek yogurt
Agave or stevia, optional
How Do I Make Strawberry Cream Popsicles?
Popsicles bring out my inner child. Frozen yogurt popsicles allow me to enjoy some inner child fun with fewer calories. I love to make them because the flavor combinations are endless. They are much less expensive to whip a batch up at home too.
This low-fat popsicle recipe is absolutely delicious. This was my go-to Weight Watchers dessert recipe when I followed the program in the past. But don’t tell the family. They will never know this is a healthy summer recipe.
For this strawberry popsicle recipe, I blended all the ingredients in a blender. It’s pretty healthy too because the “cream” is actually non-fat greek yogurt. So I guess you can call them strawberry yogurt popsicles too.
I then poured the strawberry mixture into the popsicle mold and froze for 6 hours. To unmold, gently run warm water on the mold to loosen the popsicles. These can be stored in a freezer bag for a few weeks, if they last that long!
Warmer weather calls for cool and refreshing snacks. I make sure I keep a good stock of homemade frozen yogurt popsicles in my freezer. Truthfully, my kids don’t even realize they are healthy. My pool house freezer is basically a revolving door in the summer months. The kids and their friends are always opening it up looking for a cold refreshing treat. These Strawberries and Cream Popsicles are always a refreshing hit!
