Apple cider doughnuts are a BIG hit at our farm market. While they are often enjoyed during the fall season, we make these bad boys all season long – from April until we close in December. We estimate that we make a whopping 15,000 dozen apple cider donuts each year. Holy smokes!
Ok, so in full transparency, the apple cider donuts that we make at Russo’s are not healthy – at all – (but they are sooooo good). They are deliciously deep-fried and then rolled in a cinnamon-sugar mixture when warm. If you are lucky enough to snag one off of the machine when hot, you are extra lucky. That’s when I like them best.
Chances are, if you visited your local farm market or ventured out into the apple orchards in your area for apple picking, you may have enjoyed them too.
And while it doesn’t have to be the fall season to enjoy apple cider doughnuts, fall is their time to shine. Fresh apple cider is also in season. I have a real treat for your today.
I am going to show you how to make these homemade no-yeast donuts – at home. AND…..they are baked, not fried so that’s a win there, right?skip the deep frying and try this yummy apple cider donuts recipe. Ok. Here we go.

Here are the ingredients you need to make this easy fall recipe.
Fresh Apple cider: I find that room-temperature apple cider produces a better donut. Trust me, your donuts with be full of apple flavor when you use fresh apple cider.
Plain Greek Yogurt: The yogurt makes these cake-like donuts soft and moist.
All-purpose flour
Brown sugar
Vanilla extract
Cinnamon
Eggs

Dash Donut Maker or Wilton Donut Pan
Medium bowl
Wire rack
How To Make Baked Apple Cider Donuts
This recipe can be made in either a donut pan or a donut maker. I will share how to do it both ways. This recipe will make 28 mini-donuts using the Dash or 12 regular size donuts using a donut pan.
In a small saucepan, boil the cupe of apple cider until reduced to 1/2 cup. Set aside to cool.
In a medium bowl, mix the dry ingredients together (flour, baking powder, cinnamon, nutmeg, and salt). Add brown sugar, egg, yogurt, and vanilla.
Stir in melted butter and reduced apple cider. Thoroughly mix all ingredients until it’s a smooth batter. Set aside.
Directions for Using the Dash Donut Maker
Spray or oil Dash Donut Maker and plug in to heat up. You don’t need to re-oil in between batches. Spoon batter into donut spaces. I filled them up all the way. You can also use a piping bag to fill the donut maker. This is really easy.
You’ll notice the batter start to rise before you finish filling all the spaces and that’s ok. Set the timer for 1 minute.
Flip the donuts using a cake tester or long toothpick. The donuts will be quite hot. Set your timer for 2 minutes. (the Dash recipe book calls for cooking the donuts for a longer period of time, 5 minutes total, I don’t recommend it.)
Directions for Using a Traditional Donut Pan
Preheat over to 350 degrees.
Spray the donut pan with non-stick spray. Pour or pipe the batter into each donut form. Bake for 10-12 minutes or until a toothpick comes out clean.
How To Decorate Apple Cider Donuts
To decorate cinnamon sugar donuts: dip the donuts into the melted butter and then immediately into the cinnamon sugar mix. Set on the rack to dry..
To decorate with sprinkles, dip the donuts into the apple cider glaze. Place donuts glaze side up on wire rack, Quickly add candy sprinkles and toppings before the glaze hardens.

- 1 cup apple cider
- 1 ½ cups all-purpose flour
- 1 egg
- ½ cup brown sugar
- ¼ cup plain Greek yogurt
- 4 tbsp unsalted butter
- 1 ½ tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- Topping Ingredients:
- 2 tbsp sugar
- ½ tsp cinnamon
- 1 tbsp unsalted butter
- ¼ cup confectioners sugar
- 2 tsp apple cider
- A variety of orange, yellow, black, candy sprinkles and round non-pariels
Instructions
- In a small saucepan, boil apple cider until reduced to 1.2 cup. Set aside to cool.
- Melt butter in a small saucepan, or microwave. Set aside.
- In a medium mixing bowl, mix together flour, baking powder, cinnamon, nutmeg, and salt. Add brown sugar, egg, yogurt, and vanilla.
- Stir in melted butter. and reduced apple cider.
- mix all ingredients until it's a smooth batter. Set aside.
- To prepare cinnamon sugar mixture, Mix together sugar and cinnamon in a small shallow dish.
- To Make apple cider glaze, add melted butter in a small shallow dish. Combine confectioners sugar and apple cider to make a glaze and Using shallow dishes allows you to easily dip the donuts into the butter, glaze, and cinnamon sugar.
