Chocolate Ganache Cupcakes

When I was young, my mom would make cupcakes all the time. To this day she is an amazing baker, at 86 years young. That girl can BAKE and I am so lucky because I get to be the official taste-tester. Each week, on her day off on Wednesday, she would bake enough cakes, pies, cookies or cupcakes to last through the week. Her cupcakes were always my favorite.
Our house would smell like a bakery and I couldn’t wait to get home from school to see what she cooked up. This Chocolate Ganache Cupcakes Recipe is one of her prized recipes. Literally. She won a blue ribbon for this same recipe at our local county fair years ago. Only then, she won for a cake version.
Same recipe, just in cupcake form. That’s what I love about making cakes and cupcakes. You are not limited in the type of pan you use to bake them in. So cupcakes it is.
Truth be told, I am not a huge chocolate fan. Crazy, right? But I am a huge fan of these Chocolate Ganache Cupcakes. If you need a decadent chocolate fix, then you have to make a batch of. Of course, the chocolate buttercream isn’t that bad either.
My favorite part of making any cupcake is the icing. I love to find fun ways to decorate them. Adding a nice drizzle of ganache just wasn’t enough. I went one step further and added some chocolate shavings and Lindt chocolates.
They are almost too pretty to eat….almost.

- 1 cup flour
- ¼ cup unsweetened cocoa powder
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup light brown sugar
- ½ cup sugar
- ⅓ cup Canola oil
- ½ cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup unsalted sweet cream butter softened
- 2 1/2 cup powdered sugar
- 1/2 cup Hershey Cocoa Powder
- 2 teaspoon vanilla extract
- 5 tbsp heavy whipping cream
- 1 piping bag fitted with large star tip
- Chocolate ganache layer
- 1 cup semi sweet chocolate chips
- 1/2 cup heavy whipping cream
- 1 large squeeze bottle
- Milk chocolate Lindt Lindor chocolates
- Lindt Lindor milk chocolate caramel stick
- Chocolate shavings
- Preheat Oven to 350 degree and line cupcake pan with cupcake liners
- In a large bowl, add together the flour, cocoa powder, baking powder, baking soda, and salt, mix to combine
- Add in the sugar and brown sugar stir until combined.
- Add the oil, buttermilk, egg, and vanilla extract. Stir until combined.
- Fill cupcake liner 3/4 of the way full.
- Bake for 21 minutes.
- Remove the cupcakes from the oven.
- Transfer the cupcakes to a wire rack to cool
- Using a standing mixer, beat together all ingredients until smooth and stiff peaks form
- Scoop into a piping bag and set aside
- Chocolate Ganache
- Using a small sauce pan, heat up the heavy whipping cream over medium heat
- Place the semi sweet chocolate chips into a heatproof glass bowl
- Once the whipping cream starts to simmer pour over the chocolate chips and allow to sit for 1 minute
- Whisk the chocolate chips and heavy whipping cream until smooth
- Pour ganache into the squeeze bottle and set aside
- Frost cooled cupcakes with chocolate frosting
- Pipe on some chocolate ganache
- Unwrap the Lindt chocolate truffle and place in the middle
- Break off pieces of the caramel bar and place behind the Lindt chocolate truffle
- Sprinkle chocolate shavings all over the cupcake
