Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 2 tablespoons buttermilk or whole milk
  • 1 cup mashed bananas (3 overripe bananas)
  • 1/2 cup chopped walnuts (inside batter)
  • 1/4 cup chopped walnuts (on top)

Instructions

    1. Preheat the oven to 325 farenheit.
    2. Spray a loaf pan with baker's spray and then line with parchment (for easy release). Spray the parchment with non-stick as well and set aside.
    3. Combine flour, baking soda, salt and cinnamon in a medium mixing bowl. Whisk together.
    4. In a large mixing bowl add in the egg, cup of sugar and vegetable oil. Whisk together.
    5. Pour dry over into the wet ingredients bowl and using a rubber spatula mix together. It will coarse and dry at this point.
    6. Mash the bananas and add them to the bowl.
    7. Add buttermilk (or whole milk), vanilla and 1/2 cup chopped walnuts.
      Mix well. Make sure to scrape the bottom of the bowl.
    8. Once everything is well incorporated (no dry flour left) pour the banana mixture into a prepared or greased loaf pan.
    9. Top with 1/4 cup walnuts.
    10. Bake for 55-75 mins (begin checking around the 55 min mark)

  1. Hi, The banana bread is fantastic. If possible could you please update your recipe to include the amount of cinnamon. The instructions include it but there is an a measurement on the list.
