Ingredients

  • 1 Tablespoon Olive Oil, or more as needed
  • 1 Onion, minced
  • 2 stalks Celery, diced
  • 2 Carrots, peeled and diced
  • 2 teaspoons Minced Garlic
  • 1 Tablespoon Poultry Seasoning
  • 1 1/2 cups White Rice
  • 8-10 cups Chicken Broth
  • 1 lb Cooked Chicken, chopped or shredded

Instructions

    1. Place olive oil in a stockpot over medium heat.
    2. Once oil is hot, add the onion, celery and carrots. Saute for 4 minutes, until onions are translucent.
    3. Add the garlic and poultry seasoning, stirring for 1 minute.
    4. Add the white rice and stir occasionally for 2 minutes until slightly toasted.
    5. Add the chicken broth and set heat to high until broth comes to a boil.
    6. Reduce to medium-low and simmer until rice is fluffy and cooked through, about 12 minutes.
    7. Add chicken and cook until heated through, about 4-6 minutes.
    8. Taste and adjust seasoning before serving.
