Instant Pot Arroz Con Pollo

Ingredients
- 5-6 boneless chicken tenders
- 2 tsp. paprika
- Salt and pepper to taste
- 4 tbsp. olive oil
- 1 cup onion, chopped
- 1 cup green pepper, diced
- 1 cup red pepper, diced
- 1 tbsp. minced garlic
- 2 cups basmati rice
- 3 cups chicken broth
- 1/2 tsp.saffron
- ½ tsp. Curry
- 1 bag of frozen mixed vegetables (corn, carrots, peas and green beans)
- Green onions
Instructions
- Turn on the Instant Pot ON and select "sauté"
- Add the olive oil.
- Add the diced chicken and cook for 5 - 8 minutes,
- Remove chicken from the Instant Pot and set to the side.
- Add half of the olive oil. Then add the onion, peppers, garlic.
- Saute’ 3-5 minutes, stirring often.
- Add chicken broth, rice, paprika, curry saffron, frozen vegetables, and cooked chicken.
- Mix to combine.
- Cook for 5 minutes.
- Secure the lid to the Instant Pot.
- Select manual cooking time to 10 minutes.
- Pressure release on its own for 10 minutes.
- Turn the valve to Vent to release pressure.
- Then remove the lid.
- Press "cancel".
- Garnish with diced onions
