Ingredients

  • 5-6 boneless chicken tenders
  • 2 tsp. paprika
  • Salt and pepper to taste
  • 4 tbsp. olive oil
  • 1 cup onion, chopped
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1 tbsp. minced garlic
  • 2 cups basmati rice
  • 3 cups chicken broth
  • 1/2 tsp.saffron
  • ½ tsp. Curry
  • 1 bag of frozen mixed vegetables (corn, carrots, peas and green beans)
  • Green onions

Instructions

    1. Turn on the Instant Pot ON and select "sauté"
    2. Add the olive oil.
    3. Add the diced chicken and cook for 5 - 8 minutes,
    4. Remove chicken from the Instant Pot and set to the side.
    5. Add half of the olive oil. Then add the onion, peppers, garlic.
    6. Saute’ 3-5 minutes, stirring often.
    7. Add chicken broth, rice, paprika, curry saffron, frozen vegetables, and cooked chicken.
    8. Mix to combine.
    9. Cook for 5 minutes.
    10. Secure the lid to the Instant Pot.
    11. Select manual cooking time to 10 minutes.
    12. Pressure release on its own for 10 minutes.
    13. Turn the valve to Vent to release pressure.
    14. Then remove the lid.
    15. Press "cancel".
    16. Garnish with diced onions
