All hail the Jersey Tomato. If there is one thing the Garden State is famous for it’s our Jersey Fresh Tomatoes. If you hail from the great Garden State, you probably know just how wonderful our Jersey Tomatoes are! They are the reddest of red with a flavor like no other. I guarantee they will knock your socks off. Pure deliciousness.
Summer is the perfect time to enjoy these red beauties. Have you picked any up at your local farmers’ market? Here on our farm, our tomatoes are ripe for the picking. This Jersey Fresh Panzanella Salad is the perfect way to celebrate a bountiful tomato season.
My husband eats them like apples, right off the vine. I, not so much. But I have grown to love them over the years. I especially love them in this panzanella salad. I am also a bread-aholic. Growing up, my mom would always serve salad and bread with dinner.
To this day, I still love to take a piece of bread and soak up the vinaigrette dressing from the salad. So good! I think that is why I enjoy this salad so much. It’s the best of both worlds…..Jersey Fresh Tomatoes from our farm and chunks of crusty bread tossed in a tangy Italian dressing. You just can’t beat it!
Ingredients for Panzanella Bread Salad
- Fresh Tomatoes
- Rustic French Baguette
- Fresh Basil
- Fresh Onion
- Cherry Tomatoes
- Small Mozzarella Balls (Pearl Size)
- Large Mixing Bowl
- Large Serving Bowl
How To Make Panzanella Salad
This salad can be a meal in itself. I also like to add a nice amount of fresh mozzarella and basil too. Tomatoes, basil and mozzarella are the trifecta of amaze-balls! Yep, they are that good.
I like to think of this panzanella salad as a bruschetta in a bowl. The tomatoes, bread, mozzarella, onions, and basil along with the Italian dressing are so delicious. I am just thankful that I was able to take the photos of this recipe before my husband came home for lunch. Once I handed the bowl off to him, he ate the whole dish! Everything. He left me only with one bite. So I guess that’s proof of just how good this recipe is.

This is an easy tomato salad recipe for summer. This panzanella bread salad is made with fresh tomatoes,, onion, mozzarella cheese and toasted bread cubes, all tossed in a homemade dressing.
Ingredients
- 3 Jersey Fresh Tomatoes diced
- 1 cup yellow grape tomatoes halved
- 2 cups rustic French day old bread
- 1 cup fresh mozzarella cherry size, halved
- 1/2 cup onion diced
- 3/4 cup fresh basil choppedDressing
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 1 clove garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
Instructions
- Preheat oven to 375 degrees. Line a baking sheet with parchment.
- Chop bread into bite-sized cubes (croutons). Spread over baking sheets. Season with salt, pepper and garlic powder. Drizzle olive oil over to coat. Bake for 15-20 minutes until golden. Remove from oven and cool completely.
- To make the salad: Combine tomatoes, onion, mozzarella, basil and bread cubes in a medium bowl.
- To make dressing, add vinegar, salt, pepper and garlic to a bowl. Whisk in olive oil. Pour over salad ingredients and mix gently.
