Mediterranean Quesadillas

Ingredients

  • 12 diced cherry tomatoes – Sliced in 4th’s (about 3 cherry tomatoes per quesadilla)
  • ⅓ cup diced red onion
  • 1 cup fresh chopped spinach
  • ½ cup feta cheese
  • 1 cup shredded mozzarella cheese
  • 3 burrito size tortillas

Instructions

    1. Combine cherry tomato, spinach, red onion, and cheeses in a medium bowl.
    2. Place a small amount of oil in a frying pan over medium heat.
    3. Place tortilla in the pan and place ⅓ of the filling on one side of each tortilla and fold it in half.
    4. Cook tortillas on medium heat for 3-4 minutes per side, until each side is lightly golden and cheese is fully melted.
    5. Cut into 3 triangle slices and serve with your choice of toppings.
    6. These store well in the fridge and heat up well in an air fryer. Enjoy!
