Hippity, hoppity! Easter is just around the corner. You know what that means? It means the warmer days are on the horizon. Can I get an amen!!?? My pasty white winter skin definitely needs a little Vitamin D. It also means that I will be pinning a lot of adorable Easter desserts and crafts to my Pinterest boards.

I am a sucker for cute holiday food. If you don’t believe me, just check out my Halloween or Valentine’s Day recipes. Today I’m hanging with my Peeps. I am not a big fan of the candy, but I am a big fan of these adorable cupcakes. Peep Cupcakes are the perfect Easter cupcake that the kids (and the whole family) will love.

Let’s face it, I love to make adorable desserts. When the kids were younger, I would love to surprise them after school with something fun like these Peep Cupcakes. These cute Easter Chicks cupcakes are perfect for Easter, but also a great cupcake to make for a birthday or baby shower.

How To Decorate Peeps Easter Cupcakes

To decorate these cuties, add two cups of buttercream to two bowls and 1/2 cup to another bowl. Make one bowl (with the 2 cups of frosting) a light yellow by adding 3 drops of yellow food coloring, one bowl (with the 2 cups of frosting) a darker yellow by adding 6 drops of yellow food coloring. Finally, add 4 drops of orange icing to the last bowl.

Spread the light yellow icing on the top of each muffin with an angled spatula. Prepare your piping bags by filling one with the darker yellow fitted with the #366 tip, one with the light yellow fitted with the medium round tip and one with the orange fitted with the #69 tip. Squeeze the tube of black icing into the bag fitted with the #3 tip.

Use the light yellow icing fitted with the medium round tip to pipe a dollop of frosting onto the lower part of the cupcake for the face.

Using the piping bag with tip number #366 on it, pipe “Feathers” onto both sides of the cupcake and the middle back of the cupcake for the tail. Pipe some feathers top the top of the head too.

Use the bag filled with the orange icing to make the beak and the beak. Add two black eyes using the bag of black icing fitted with the #3 tip.

Ingredients

  • Cupcake Ingredients
  • 1 box of Vanilla cake mix
  • 3 large eggs room temp
  • 1/2 C of softened unsalted sweet cream butter
  • 1 C whole milk
  • Black cupcake liners
  • cupcake pan
  • Frosting Ingredients
  • 3 C unsalted sweet cream butter, softened
  • 6 C powder sugar
  • 3 tsp vanilla
  • 6 TBSP heavy whipping cream
  • Orange gel food coloring
  • Yellow gel food coloring
  • 4 disposable piping bags
  • 2 Tip couplers
  • Medium Round tip
  • # 3 tip
  • #69 tip
  • # 366 tip
  • 1 black icing tube
  • 1 medium ice cream scooper
  • 1 angled icing spatula
  • 2 Medium bowls

Instructions

Cupcake Instructions

  1. Prepare and bake cupcakes according to package directions. Remove from oven and allow to cool completely.

Frosting Instructions

  1. Using a stand mixer, combine all ingredients and mix on medium speed.
  2. Mix until you see stiffed peaks in your frosting.
  3. Scoop about 1/2 C frosting out and place into one of the two medium bowls
  4. In the first medium bowl mix in 3-5 drops of Orange gel food coloring until combined. You're wanting to get a dark orange color for the beak
  5. In the second medium bowl, scoop about 2 C of frosting in it.
  6. Mix in about 6 drops of yellow food coloring and mix until combined. You are wanting to get a dark yellow. This will be the frosting for the feathers
  7. Using the remaining frosting, mix in 3 drops of yellow food coloring to get a light yellow color.
  8. Cut tips off the piping bags and place tip 3 onto the coupler and into one the bags
  9. Place tip 366 into the second piping bag
  10. Place the medium round tip into the third piping bag and scoop some of the light yellow frosting into the bag
  11. Place the #69 tip into the fourth piping bag and scoop the orange frosting into it
  12. Scoop the dark yellow frosting into the piping bag with tip 366
  13. Squeeze the black icing into the piping bag with tip 3 on it

Decorating instructions

  1. Using the medium ice cream scooper, scoop out some of the light yellow frosting and place it onto the top of the cupcake
  2. Using the angled spatula, smooth out the frosting
  3. Using the Medium round tip, pipe a dollop of frosting onto the lower part of the cupcake for the face
  4. Using the piping bag with tip number 366 on it, pipe "Feathers" onto both sides of the cupcake and the middle back of the cupcake for the tail.
  5. Pipe some "Feathers" on the back part of the face
  6. Using the number 3 piping bag, pipe two dots for the eyes
  7. Using the number 69 piping bag, pipe a "beak" in the middle of the face.
