When I originally made this pico de gallo recipe for my family, they were skeptical. “How can you add pineapple to a salsa?”, they asked. Well, I could have sat there and eaten the whole bowl by myself. But, that would not be good, so I convinced them to at least take a taste. Ingredients

  • 5-6 ripe plum tomatoes
  • 1 cup fresh pineapple, finely diced
  • 1-2 jalapenos, to taste, finely chopped
  • 2/3 cup fresh chopped cilantro
  • 2/3 cup red onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon vegetable oil
  • Juice of one lime
  • 1/2 teaspoon salt

Instructions

  1. Add all of the chopped ingredients to a mixing bowl. Season with salt. Drizzle lime juice over and mix well. Serve with tortilla chips.

  1. I like jalapeno popper dip or a 7 layer dip. This sounds good too. I would leave out the onions out though lol

  2. Oh I love making a shrimp dip….by putting cream cheese on a pizza pan…then top with cocktail sauce..and then cold small shrimp on top. Oh so yummy on crackers!
