Cajun Sweet Potato Soup

Ingredients

  • 1/2 Tbsp salted butter
  • 1/2 Tbsp. olive oil
  • 1 yellow onion, diced
  • 1 Tbsp. Minced garlic
  • 2 Tbsp. cajun seasoning
  • 4 cups chicken broth
  • 5-6 sweet potato, peeled and cut into cubes
  • 2 Tbsp fish sauce
  • 1 cup canned corn
  • 2 tsp. Smoked paprika
  • 1⁄4 tsp. Cayenne
  • 1 Tbsp lemon juice
  • salt and pepper to taste
  • 1 pound shrimp, peeled and deveined
  • 1 Tbsp oil
  • 1 Tbsp cajun seasoning

Instructions

    1. In a small saucepan add the butter, and oilheat over medium to high heat.
    2. Add the onion and cook until tender.
    3. Add the garlic, and cajun spice, to the onions and toss to combine.
    4. Cook for 2-3 minutes over medium heat.
    5. In a dutch oven add the onion mixture, sweet potatoes, and broth.
      Stir to combine.
    6. Bring the sweet potatoes to a boil and cook for 3-4 minutes.
    7. Reduce the heat to a low to medium, and simmer until the potatoes are tender.
    8. Cook for 25 minutes.
    9. Turn off the heat and allow the temperature to cool for 15 minutes.
    10. Add the sweet potato mixture to a blender and blend on high until it's a puree.
    11. Place the soup back in the dutch oven and add the fish sauce, canned corn, paprika, cayenne, and lemon juice.
    12. Add salt and pepper to taste to the soup.
    13. Heat the soup over low.
    14. In a medium saucepan add the oil and heat over medium heat.
    15. In a medium sized bowl add the shrimp and cajun spice, toss to combine.
    16. Add the shrimp to the saucepan and cook for 4-5 minutes.
    17. Pour your soup into the bowls and top with the cajun shrimp.
    18. Garnish and enjoy.
