When I was young, it was always a special treat to open up my lunch box and find a Hostess Glazed Apple Pie staring me in the face. Such wonderful memories. These delicious treats were filled with a traditional cinnamon apple filling and then topped with a sweet glaze. You’ve heard the saying “Easy As Pie” right? Well, I have decided to recreate my childhood favorite and these Glazed Apple Hand Pies really are “Easy As Pie”! It is seriously hard to enjoy just one!

It’s fall here on the farm. And that means it’s apple season too. Which translates to Melissa get’s to make lots of yummy apple recipes for the family. Fall is my favorite time of year. There is something so comforting about baking, especially when the weather starts to cool. Thanks Mom for teaching me all your tips and tricks. Anyway, I always use a variety of apples when I bake. Using more than one type of apple adds to the flavor profile of the recipe. I used a combination of Fuji and Honey Crisp to make these Glazed Apple Hand Pies.

I scaled down the ingredient amounts of my go-to apple pie filling (from the Junior’s Cookbook). I also have learned through the years, that it is OK to cheat once in a while….I used a refrigerated pie crust to cut down on time. Bottom line is, do whatever works best for you. No judgment on my part (wink..wink). Use a large biscuit cutter or the rim of a glass to cut out the circles. Add a heaping teaspoon of the apple filling to one side of the circle. Brush circle with egg wash, fold over and press together with the end of a fork.

Once the hand pies are baked and cooled, dip them in a sweet vanilla glaze. Place on a baking rack to dry (that is if they can last that long.)

Ingredients
  • 3 large apples cored, peeled and finely chopped
  • 1 box refrigerated pie crust
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 tablespoon flour
  • 1/2 tablespoon cornstarch
  • 2 tablespoons apple juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 1 egg beaten
  • Vanilla Glaze

  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1 cup powdered sugar add more if necessary to reach desired consistency
Instructions
  1. Preheat oven to 375 degrees.
  2. Peel, core and finely dice three apples. Add to a medium bowl.
  3. Add sugars, flour, cornstarch, cinnamon, salt, apple juice and lemon juice to bowl. Mix to incorporate.
  4. Unroll one pie crust. Use a large biscuit cutter or rim of a glass to make eight circles.
  5. Fill each circle with one heaping teaspoon of apple filling.
  6. Brush circle with egg wash. Fold over and press together with fork. Transfer to a parchment lined baking sheet.
  7. Pierce a whole in the top of each hand pie with a fork. Brush with remaining egg wash.
  8. Bake 20 minutes or until golden.
  9. Allow to cool.
  10. While hand pies are cooling, prepare glaze.
  11. Dip each hand pie in the glaze and set on a baking rack to dry.
