Grilled Chicken Cobb Salad
Delicious, light and flavorful is the way to go with this Grilled Chicken Cobb Salad recipe. This easy meal idea is great to take with you when you’re on the go, whether you’re headed to work or traveling.
Ingredients
- 5 large eggs
- 6-8 strips bacon
- 1 pound chicken breast tenderloins
- 1 head romaine lettuce, coarsely chopped
- 1 head baby bok choy, chopped
- 8-10 Grape tomatoes, chopped
- 1 avocado, thinly sliced
- 4-6 ounces feta cheese, crumbled
- 2 tsp onion powder
- 2 tsp black garlic powder
- 2 tsp black pepper
- 1 tsp salt
- 1 tsp paprika
- Dressing of choice.
Instructions
- In a medium pot bring 5 eggs to a boil for 20 mins, remove from heat and immediately place into ice water bath.
- Heat a skillet over medium high heat.
- Once heated, add strips of bacon, careful not to over crowd the pan.
- Fry bacon for 2-3 min on each side, or to desired thickness
- Drain on paper towel.
- While the bacon is cooking, season the chicken on both sides.
- Once bacon is done cooking, add chicken to the pan and sear in the bacon grease.
- Brown on both sides (about 4 mins per side) but can vary based on your skillet/stovetop combination.
- Remove and let drain on paper towels.
- Add lettuce and bok choy to a large salad bowl.
- Peel eggs and slice in half or chop if preferred.
- Add tomatoes, avacado, chicken, bacon and feta cheese.
- Top with your favorite dressing and enoy
Notes
Optional toppings:
Swap chicken for thick cut deli ham or honey baked ham chopped.
Add shredded cheese if thats a preference over crumbles.
Nuts, Olives, sweet onions and or peppers would also be fantastic.
I used bok choy and romaine lettuce because they photograph better than iceburg lettuce but feel free to offer suggestions on other types of greens.
