What’s In the Grilled Chicken Cobb Salad?

While you probably already know that cobb salad typically has lettuce, cheese, and tomatoes, this Grilled Chicken Salad has a more unique taste and includes some of the following ingredients:

  • Bacon – You can use up to eight strips of bacon. If you LOVE bacon, eight strips will give you more than enough of those crispy, salty pieces you want to taste with your lettuce leaves. If you like it but don’t need too much of it, use around six slices!
  • Feta Cheese – The crumbles of feta cheese add a slightly zesty taste that goes great with the bacon and the chicken you’ll use.
  • Baby Bok Choy – If you like a crunch with your salad, you’ll enjoy having some baby bok choy in the mix with the lettuce and bacon.
  • Avocado – Slice your avocado into super thin pieces. It’s got a great texture that adds something extra when paired with chicken, bacon, and feta.

Of course, you’ll also need the basics for this salad, such as romaine lettuce, chicken, grape tomatoes, and cooked eggs! Don’t forget – you can use any type of dressing that you’d like on this salad. You can buy one from the store or make it at home from scratch, whichever you like best.

If you’d like to prepare your own dressing that will go great when drizzled over this fresh, flavorful salad full of good-for-you ingredients, consider combining red wine vinegar with a bit of lemon juice, dijon mustard, Worcestershire sauce, and finely minced garlic to prepare an amazing sauce.

You can also use a lemon vinaigrette, which would also taste great with the ingredients in this salad. If you prefer to go with store-bought selections, ranch dressing is always an excellent choice as well.

Do I have to use grilled chicken or can I swap it out for a different type of meat?

No, you absolutely don’t need to use the chicken in this recipe. If you prefer to skip the chicken, feel free to leave it out completely or replace it with something else, such as chopped pieces of baked ham or baked turkey.

What if I don’t like feta cheese?

If you’re not a big fan of feta, it’s not a biggie. Simply swap it for a different type of cheese, such as mozzarella, mild cheddar, or any other cheese you do enjoy.

When you’re in the mood for a light, fulfilling meal sure to satisfy you, whether you eat it for lunch or dinner, try this amazing Grilled Chicken Cobb Salad. Not only does it taste great, but it’s also so simple to prepare.

Notes

Optional toppings:
Swap chicken for thick cut deli ham or honey baked ham chopped.

Nuts, Olives, sweet onions and or peppers would also be fantastic.

I used bok choy and romaine lettuce because they photograph better than iceburg lettuce but feel free to offer suggestions on other types of greens.
