This week, my husband and I will officially be “empty-nesters”. While I am still not sure how I feel about all this, I have a busy week ahead and need easy dinner ideas like these Shredded BBQ Chicken Sandwiches. We will be moving AJ into his dorm to start his freshman year of college at the end of this week.

Say what!? I am ok ( at least I keep telling myself that).

The good thing is he is only one hour away. And while I know he will spread his wings and fly, at least it is not five hours away as when Gabby headed off to Boston. Anyway, this week will be hectic with organizing the kid who is never organized and balancing farm life. So quick and easy meals are on tap. Give these pulled BBQ chicken sandwiches a try. They are easy, delicious and one of my favorite go-to family meals.

Chicken Breast (or 10-12 chicken tender strips)

Buttermilk –  Pro Tip: Don’t have any in your refrigerator? No worries. To make your own buttermilk, add 1 tablespoon of vinegar or lemon/lime juice to every cup of milk.

Salt & Pepper

Seasonings

Cayenne pepper powder

Worcestershire sauce

Soy sauce

Barbecue sauce

Hamburger Buns

Optional Toppings

Shredded lettuce

Sliced Tomatoes

Sliced Cheddar cheese (or your choice of cheese)

How Do I Make Pulled BBQ Chicken Sandwiches?

Start by mixing together the Worcestershire sauce, soy sauce and sugar together in a bowl and stir until the sugar has dissolved. Add the mixture to the buttermilk as well as the salt, ground black pepper, cayenne pepper powder, garlic powder, onion powder, dried parsley and garlic cloves.

Wash and clean the chicken and then add the chicken breast or strips to the buttermilk mixture. Marinade the chicken for two hours in the fridge.

Heat a cast-iron skillet over medium heat and drizzle in the olive oil. Remove the chicken from the marinade and cook them in the pan for four to eight minutes on each side (depending on thickness) until they form a skin and remove them from the pan.Looking for an easy weeknight meal? Shredded BBQ Chicken Sandwiches

Ingredients

  • 1 1/2 - 2 lbs uncooked chicken breast or chicken strips
  • 5 cups of buttermilk*
  • 2 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of cayenne pepper powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 6 garlic cloves, diced
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of soy sauce
  • ¼ - ½ cup of barbecue sauce
  • 1 tablespoon of olive oil (or vegetable oil)
  • 6 burger buns
  • ½ cup of shredded lettuce
  • 2 tomatoes, sliced
  • Cheddar cheese (or your choice of cheese)
