It doesn’t have to be summer to enjoy a side of coleslaw, but it is as we all know, perfect summer salad recipe. Summer is just getting started and I had to share this delicious twist on the classic coleslaw recipe. This Hawaiian Coleslaw (also know as luau coleslaw or pineapple slaw), is a delicious balance of sweet and savory. And, it also has bacon as one of the ingredients so what can go wrong there?

I will admit, I was never a huge fan of coleslaw until I tried an apple raisin coleslaw at a local restaurant. I loved it so much that I had to come home and recreate the recipe. The same goes for this Hawaiian pineapple slaw recipe. I had a similar version at a family gathering and I loved the balance of flavors between the crunchy cabbage and sweet pineapple.

You don’t have to be in Hawaii to enjoy this slaw recipe at home (although that would be really nice). Bring the tropical flavors home to your kitchen and try this Hawaiian coleslaw recipe.  It’s a great summer salad to serve at a party or as a side for the family.

What Ingredients Do I Need To Make Hawaiian Coleslaw?

1 Small Head of cabbage, finely shredded or 1 14 oz. package coleslaw mix
Broccoli slaw
Shredded matchstick carrots
Cooked bacon (because everything is better with BACON!)
Fresh pineapple 
Mayonnaise
Honey
Rice wine vinegar
Pineapple juice

How Do I Make Pineapple Coleslaw

This Hawaiian Coleslaw recipe (or pineapple slaw) is zesty, crunchy and balanced with sweet pineapple flavor. This easy slaw recipe is a tasty twist on the classic coleslaw.
 
In a small bowl mix all ingredients for the dressing until well combined.
Cook the bacon until crisp and then chop.

Ingredients

  • 1 Small Cabbage, finely shredded or 14 oz. package coleslaw mix
  • 1 cup broccoli slaw
  • 1 cup shredded matchstick carrots
  • 1/4 cup cooked bacon
  • 1 cup fresh pineapple chunks
  • Dressing
  • 1 cup mayonnaise
  • 1 1/2 Tbsp. honey
  • 1 1/2 Tbsp. rice wine vinegar
  • 1/4 cup pineapple juice

Instructions

  1. In a small bowl mix all ingredients for the dressing until well combined.
  2. Cook the bacon until crisp. Drain on a paper towel and then chop.
  3. Add the cabbage (or coleslaw mix), carrots, broccoli slaw, pineapple, and bacon to a large mixing bowl. Mix together.
  4. Pour the dressing over the slaw mix and toss to combine.
