This Hawaiian Coleslaw (also know as luau coleslaw or pineapple slaw), is a delicious balance of sweet and savory. And, it also has bacon as one of the ingredients so what can go wrong there?

I will admit, I was never a huge fan of coleslaw until I tried an apple raisin coleslaw at a local restaurant. I loved it so much that I had to come home and recreate the recipe. The same goes for this Hawaiian pineapple slaw recipe. I had a similar version at a family gathering and I loved the balance of flavors between the crunchy cabbage and sweet pineapple.

Hawaiian Coleslaw (Pineapple Slaw)
Ingredients
- 1 Small Cabbage, finely shredded or 14 oz. package coleslaw mix
- 1 cup broccoli slaw
- 1 cup shredded matchstick carrots
- 1/4 cup cooked bacon
- 1 cup fresh pineapple chunks
- Dressing
- 1 cup mayonnaise
- 1 1/2 Tbsp. honey
- 1 1/2 Tbsp. rice wine vinegar
- 1/4 cup pineapple juice
Instructions
- In a small bowl mix all ingredients for the dressing until well combined.
- Cook the bacon until crisp. Drain on a paper towel and then chop.
- Add the cabbage (or coleslaw mix), carrots, broccoli slaw, pineapple, and bacon to a large mixing bowl. Mix together.
- Pour the dressing over the slaw mix and toss to combine.
