During the summer months when our Jersey Fresh tomatoes are in season at the farm, I find myself making Pico de Gallo at least once a week. Folks, it’s just so easy to make. No excuses here. The ingredients for fresh salsa recipe are simple – tomatoes, jalapenos, onions, lime juice, and garlic.

Since my family loves Pico de Gallo, I thought it would be fun to put a little spin on the classic. This Pineapple Pico de Gallo is sweet and spicy at the same time. It’s the perfect scenario of sweet and spicy working together to create one big bowl of deliciousness! So much flavor going on with this recipe. The sweet pineapple balances out the spicy jalapenos. It pairs perfectly with the ripe tomatoes, cilantro, and onion too.

Ingredients
- 5-6 ripe plum tomatoes
- 1 cup fresh pineapple, finely diced
- 1-2 jalapenos, to taste, finely chopped
- 2/3 cup fresh chopped cilantro
- 2/3 cup red onion, diced
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- Juice of one lime
- 1/2 teaspoon salt
Instructions
- Add all of the chopped ingredients to a mixing bowl. Season with salt. Drizzle lime juice over and mix well. Serve with tortilla chips.

Oh I love making a shrimp dip….by putting cream cheese on a pizza pan…then top with cocktail sauce..and then cold small shrimp on top. Oh so yummy on crackers!

My absolute favorite dip recipe is probably a 7 layer dip with all the good stuff in it and throw in black olives. I could eat that with a spoon (and have before!)
