Blueberry Bellini And A Toast To Summer

I just turned my calendar to July and I think it’s a perfect time to celebrate summer. This Blueberry Bellini is the perfect way to celebrate.

This Blueberry Bellini is the perfect drink to toast the start of summer. It's made with Proseco sparkling wine and Jersey Fresh blueberries. Super easy and delicious drink recipe.

There are so many wonderful reasons to celebrate the summer. Cheers to the kids summer vacation, long hot days, running barefoot in the grass, swimming in the pool, and day trips to the shore. Cheers to chasing fireflies, spontaneous outings, family road trips and fun times with friends.

Summer also makes me appreciate our farm even more. It’s a toast to the wonderful Jersey Fresh produce we grow here at Russo’s. Yes, it’s a lot of work and long hours for our entire family but it is so worth it. Seeing the abundance of corn, tomatoes, peaches and many other fruits and vegetables that we grow, makes me proud that the fruits (no pun intended) of our labor are really paying off. Cheers to helping feed America. That’s what the family farm is all about.

Blueberry Bellini - Feature 1

Bellini’s are traditionally made with peach nectar and Proseco Sparkling Wine. Since it’s blueberry season here in Jersey, I thought I would change this sparkling drink a little at try it with the blueberries we grow here on our farm. Cheers to that too!

This Blueberry Bellini is so simple to make. Begin my making a simple blueberry syrup with equal parts sugar, water and blueberries. Once the blueberry syrup is cool, I puree it in a blender and run it though a sieve to remove any pulp. This blueberry syrup is great to use in any type of drink – cocktail or mocktail! I can’t wait to try making a blueberry margarita.

Blueberry Bellini - Flute

Now all you have to do is open your Proseco — carefully —  and pour about 3 ounces into a champagne flute. Slowly pour the blueberry syrup to the top. I garnished these with some blueberry skewers.

Ingredients
  • 1 bottle Proseco
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/2 cup Jersey Fresh Blueberries plus extra for garnish
Instructions
  1. In sauce pan, combine water, sugar and 1/2 cup blueberries. Bring to a boil. Let cool
  2. Once the blueberry simple syrup is cool, puree in a blender until smooth. Run through a sieve to remove pulp.
  3. Fill up 2 champagne glasses 2/3 full with Proseco. Top with the blueberry simple syrup, filling glass to the rim.
  4. Garnish is blueberry skewers
