It’s Pizza Night! My favorite night of the week. Pizza is a food group in our home because everyone loves it and it keeps my family satisfied. As a pizza enthusiast, I have tried it all ways.
But, my favorite way by far to enjoy pizza is by grilling it. It doesn’t have to be grilling season to make grilled pizza either. I have been known to be standing in 40-degree weather grilling pizza just for a slice of perfection.
There is just something about the wood-fired crust that gets me every time!
So where did grilled pizza originate from? Here is a little history lesson. I have done some research and all the history of grilled pizza points to Al Forno in Providence, Rhode Island. Chef-owner Johanne Killeen and her late husband and co-chef, George Germon, admired the simplicity, elegance and seasonality of regional-Italian cooking.
George learned about grilled pizza from his fishmonger, who recalled how they would make grilled pizza in his hometown in Italy. George liked the idea, experimented to create his own style of grilled pizza for his restaurant and the rest is history.

- Pizza sauce – homemade or store-bought
- Flour for rolling out the dough
- Olive oil
- Vegetable Oil for grill
What Toppings Can You Add To Pizza?
The toppings you can add to pizza are endless. Here are a few of my favorite suggestions.
- Mozzarella cheese, shredded or sliced
- Parmesan cheese, shredded
- Italian sausage, cooked
- Pepperoni
- Bacon
- Ham, diced
- Chicken, cooked and diced
- Mushrooms
- Green peppers or multi-colored peppers
- Tomatoes
- Pineapple (don’t knock it – it’s good!)
- Red or white onions
- Black olives, sliced
- Fresh herbs
- Arugula
- Dried oregano
- Dried basil
How Do I Make Grilled Pizza? Pizza Grilling Tips
Prepare pizza dough in advance and let rise. Then make the pizza sauce and all prepare all of the toppings, set aside.
Roll out pizza dough into a thin rectangle using a small dusting of flour so the dough doesn’t stick. Place dough on large baking sheet or pizza paddle.
Heat grill to medium-high heat. Coat grates of grill with vegetable oil using a folded paper towel. Slide pizza dough onto heated grates. Cook for 2-3 minutes or until the bottom is lightly brown. Flip pizza over and brush lightly with olive oil.
Spread on pizza sauce and top with mozzarella cheese and toppings of your choice. Close the lid and grill for 2-3 minutes or until cheese is melted and toppings are lightly browned.
Remove from grill and transfer to a cutting board. Add fresh herbs and parmesan cheese if desired.
