How to Make Creamy Tomato and Cucumber Salad
Cucumber Tomato Salad Ingredients
- Roma tomatoes: I used thinly sliced Roma tomatoes for their beautiful color and sweet flavor. You can use any tomato varieties you like.
- English cucumbers: English cucumbers have fewer seeds and a thinner skin, but you can use regular cucumbers as well. You may want to peel them before thinly slicing them.
- Red onion: Thinly sliced.
- Mayonnaise
- Sour cream: Or use plain Greek yogurt if you have it on hand.
- White vinegar: Apple cider vinegar or red wine vinegar will also work!
- Fresh dill: If you don’t have fresh dill, you can use ½ teaspoon of dried dill.

Creamy Tomato and Cucumber Salad Tips & Tricks
- If you find the flavor of raw onion too strong, you can soak the slices in cold water for 10 minutes, then drain before adding to the salad.
- To add some protein to the salad, try tossing in some crumbled feta cheese or diced avocado. For a bit of crunch, add a handful of toasted pine nuts or sunflower seeds. If you like a bit of heat, sprinkle in some red pepper flakes or diced jalapeños.
- This salad is perfect for summer barbecues and picnics. Serve it alongside grilled meats, fish, or veggie burgers. It also makes a great addition to a sandwich or wrap for a refreshing crunch. Try using the leftover tomato cucumber salad on our Chicken Pitas!
- If you have any leftover salad, store it in an airtight container in the refrigerator for up to 2 days. The vegetables may release some liquid as they sit, so you may need to drain off the excess before giving the salad a quick toss and enjoying it again.
